Overnight Oats with Chia

This is one of my favourite breakies to take with me and enjoy on the go.

It is important to make this the night before to allow the oats and chia seeds to soak into the coconut yogurt and almond milk. This also gives the perfect yummy texture :)

Finding the time to prepare your meals in advanced can help you to stay on track with your health goals and it also saves you LOADS of money. This overnight oats took me around 5 minutes to whip up. Sometimes I make a larger batch which will last me a few days, I just divide it into separate containers for each morning.

Ingredients

  • 1/2 oats

  • 1 x banana

  • Large table spoon chia seeds

  • 1/2 cup almond or coconut milk

  • large table spoon of coconut yoghurt

  • Frozen berries (I use blueberries and raspberries)

Method:

  1. Mix all ingredients in a container or jar, leaving the frozen berries for the next day

  2. Place in fridge and leave over night

  3. The day you are going to eat it add the berries on top or mix them through, this also helps to keep it cold until you eat it :)

  4. Enjoy

These ingredients are actually in my staple ingredient shopping list, not just to make this recipe but to use for other snack ideas and my favourite morning smoothie. Leading into these warmer months I hope to see you add this to your everyday shop :) Trust me, once your get a good base of healthy and YUMMY ingredients in your home it will make your health goals a lot easier to achieve. You will also start to create healthy habits that will soon come naturally to you.

Oats - $1.10 for 750g = 36cents

Frozen berries - $3.49 for 500g

Bananas - Vary in cost - Around $2-$4 a kilogram

Chia Seeds - $5.50 per 400g

Almond Milk - $2.00 per L

A rough cost of over night oats per serving = Around $2-$3!!!!

Now lets compare that to a $10 bacon & egg roll or even one from McDonald's??

This recipe isn’t just affordable to make, it tastes yummy, is low GI, a good source of fibre and omegas. Making this great for the gut, heart and brain :)
