Roasted Pumpkin Soup
This is such a great cheap, easy and quick meal to make. You just need the four main ingredients; pumpkin, garlic, onion and olive oil and it then can be modified with flavors to your choice. You can even add in other vegetables if you like.
This recipe should serve around 6-8 bowls.
Tip: If you have a busy day or afternoon, you can always roast the ingredients for 30-40 mins at any time before mixing them to blend.
Ingredients:
1/2 Kent pumpkin
4 cloves of garlic
1 x red onion
Olive oil
Herbs/spices (I use oregano, cinnamon, cloves, nutmeg)
Salt & Pepper
Seeded sourdough bread & organic butter (optional)
Recipe:
Preheat oven to 180 degrees
Chop up pumpkin and discard seeds and skin in your FOGO bin or keep skin to roast separately
Peel & chop onion and garlic
Place the above ingredients on a baking tray, drizzle with olive oil and herbs
Roast in the oven for thirty minutes or until nice and soft and a tiny bit of char on parts of the pumpkin and onion
Once roasted, place all the ingredients into large saucepan
Add 1 - 2 litres of water depending on how runny you like your soup
Using a blending stick, blend until nice a smooth
Heat on stove top
Toast up the sourdough and add some organic butter on top
Serve soup with a drizzle of olive oil, salt & pepper and toast :)
