Sweet Potato Boats

This is one of my go to recipe towards the end of the week as I always have sweet potato in the fridge and you can do what ever topping you like. If I am on my own I sometimes just add beans and smashed avocado, this could also be a nice a simple meal for kids.

The image above is more of a Mexican style dish.

Ingredients:

  • Small - Medium size sweet potatoes (1 per person)

  • Turkey Mince

  • ground cumin/smoked paprika

  • Spanish onion diced

  • 1 x avocado

  • 1 tbsp natural yoghurt

  • bunch of coriander

  • 300 g cherry tomatoes diced

  • Lime juice

Recipe:

Sweet potatoes - Cut each potato in half and place on baking tray, drizzle over olive oil and salt - roast in the oven for 40 - 50 min on 180 degrees.

Mince - Pan fry half Spanish onion and turkey mince add in spices such as cumin, smoked paprika - cook through and create a little char on the mince

Salsa - In a small bowl , add the other half of the Spanish onion, diced cherry tomatoes, add half the bunch of coriander, salt & pepper, lime juice and some ground cumin. Mix well and taste to see if the flavor needs balancing. (if you like jalapenos add them to the salsa too)

Guac - In a small bowl, smash one avocado and add 1 x tlsp natural yoghurt. Mix well - combine with salt and pepper.

Once sweet potatoes are ready, place each one on a plate. Spoon out some of the middle to create a bowl like shape.

Add mince, salsa, guacamole and coriander to serve (chilli sauce optional)
