Pulled pork Tacos

SLOW COOKERS! They are the best and so useful for this time of year. This pulled pork is my favorite and tacos is the first go to meal - then I use the left overs for sandwiches, homemade pies or fry the pork for Vietnamese style salads. The key is to make a flavorsome rub to marinate the pork before putting it in the slow cooker. Pork usually takes around 4 hours on high or 8 hours on low. The longer the better.

PULLED PORK Ingredients:

2 kg Pork shoulder - fat trimmed

2 x red onions & 4 x garlic gloves peeled and chopped

Rub marinate:

  • 1 x tbsp Fennel seeds

  • 1 x tbsp Apple cider vinegar

  • Olive oil

  • 1 x tbsp garlic powder

  • 1 x tbsp Balsamic Vinegar

  • 2 x tbsp Ground Cumin

  • 2 x tbsp Smoked paprika

  • 4 x garlic cloves chopped

  • 1 x tbsp brown sugar or honey

In a small mixing bowl combine all rub ingredients and stir together - taste to see if flavor needs balancing.

Place chopped onions and garlic into the slow cooker, once fat is trimmed from pork place that into the slow cooker on top of the onions.

Using your hands, marinate the pork with the rub. Make sure you cover it all.

Fill slow cooker with 1 litre water or so it is about half way up to the pork.

Place the lid on the slow cooker and turn on required heat.

Tacos:

Guacamole:

  • 1 x avocado

  • 1 x tbsp Greek yogurt

  • 1 x tsp cumin

  • salt & pepper

  • Lime juice

In a bowl, mash the ripe avocado and combine ingredients - add lime juice to taste and balance out.

Sweet Pot Fries

  • 1 x large sweet potato - chopped into chip shapes

  • Olive oil

  • Paprika

Turn on oven for 180 degrees, place sweet potato on baking dish, season with spices and drizzle over olive oil or coconut oil. Bake for around 30 mins or until golden brown and crispy.

Coleslaw

  • 1 x coleslaw packet

  • 1 tbsp apple cider vinegar

  • Olive oil

Using a bowl mix together all ingredients - may need salt and pepper to balance vinegar

Chilli Yoghurt

  • 3 tbsp Greek yogurt

  • 1 x tbsp chipotle seasoning

  • Tabasco or hot sauce

In a small bowl combine all ingredients - add the hot sauce to your liking.

Bunch or Coriander - chopped and ready to garnish tacos

Corn Tortillas - just before ready to serve, to heat you can lightly pan fry which will add a little char texture,.

Tacos:

Once pork and sweet potatoes are ready - place everything onto the table for a DIY taco night.

Combination: Tortilla, Guac, Pork, Coleslaw, Chilli Yoghurt, Coriander and chili sauce plus Fries on the side :)
